Mediterranean Grilled Cheese Sandwich

Wisconsin Whole Milk Mozzarella cheese, shredded

Wisconsin Feta cheese, crumbled

fresh spinach

Instructions
- Heat 1 tsp of olive oil in a skillet over medium-high heat and sauté garlic and spinach until the spinach wilts.
- Remove from heat, stir in basil, and set aside.
- Spread Mozzarella and Feta cheese over one slice of bread.
- Layer tomatoes over the cheese, then spread the spinach mixture on top.
- Sprinkle olives and red onions over the tomatoes and season with black pepper.
- Top with the second slice of bread.
- Spread 1 tsp of olive oil in the skillet, add the sandwich, and cook until the bottom is golden brown.
- Flip the sandwich, add the remaining olive oil, cover, and cook until the other side is golden brown.
- Serve immediately.
