Italian Grilled Cheese with Roasted Peppers and Spinach

Instructions
- Preheat the oven to 350°F.
- Place sliced peppers in a baking dish, drizzle with olive oil, and season with salt and pepper. Toss to coat.
- Bake for about 30 minutes until the peppers are dark. Allow to cool.
- In a sauté pan, heat olive oil, add chopped garlic and spinach, and sauté until wilted. Season with salt and pepper and let cool.
- Assemble the sandwiches with four slices of sourdough on a counter.
- Layer 4 slices of cheese on each piece of bread, then add half the spinach on two slices.
- Top with roasted peppers and the remaining spinach, then cover with the other slices of bread with cheese facing the spinach.
- Melt butter in a pan, add chopped basil, and brush on one side of the sandwich. Sprinkle with Romano cheese.
- Heat a grill pan and place the sandwich butter-side down. Cover with a lid to melt the cheese.
- After 3-4 minutes, check for a golden brown color. Brush the top side with butter and sprinkle with Romano cheese.
- Flip the sandwich and repeat the toasting process until the cheese is melted.
- Slice with a serrated knife and serve immediately.
