Lobster Burgers

Ingredients

The burgers

  • 1 pound fresh lobster meat
  • ½ pound raw shrimp
  • cup Panko bread crumbs
  • ¼ cup shredded Gruyère cheese
  • 1 teaspoon lemon zest
  • ¼-½ teaspoon cayenne pepper
  • pinch salt and pepper
  • 2 tablespoons butter
  • 6 brioche or pretzel burger buns
  • 6-8 slices cooked thick cut bacon
  • 1 whole avocado

Browned Butter Lemon Aioli

  • 2 tablespoons butter
  • ½ cup mayo
  • 1 tablespoon lemon juice
  • 1-2 tablespoons sweet thai chili sauce
  • 1 clove garlic
  • pinch cayenne
  • pinch salt and pepper

Basil Corn + Peach Salsa

  • 2 ears grilled corn
  • 1 whole peach
  • ¼ cup fresh basil
  • 1 whole jalapeño
  • 1 whole lemon
  • pinch salt

Instructions

  1. Pulse lobster and shrimp in a food processor until ground, or chop finely.
  2. Combine seafood with Panko, Gruyère, lemon zest, cayenne, salt, and pepper, then form into 6 burgers and refrigerate for 15-30 minutes.
  3. Melt butter in a saucepan over medium heat until browned, then set aside to cool.
  4. In a bowl, mix mayo, lemon juice, sweet thai chili sauce, garlic, cayenne, salt, and pepper, then stir in cooled brown butter and refrigerate.
  5. Cut corn kernels off the grilled corn and mix with peach, basil, jalapeño, lemon juice, and salt to make salsa, then refrigerate.
  6. Heat a skillet over medium heat, add butter, and cook burgers for 5-8 minutes on each side until cooked through.
  7. Assemble the burgers by spreading aioli on buns, adding burger patties, avocado, bacon, and salsa.
