Basil Corn + Peach Salsa

Instructions
- Pulse lobster and shrimp in a food processor until ground, or chop finely.
- Combine seafood with Panko, Gruyère, lemon zest, cayenne, salt, and pepper, then form into 6 burgers and refrigerate for 15-30 minutes.
- Melt butter in a saucepan over medium heat until browned, then set aside to cool.
- In a bowl, mix mayo, lemon juice, sweet thai chili sauce, garlic, cayenne, salt, and pepper, then stir in cooled brown butter and refrigerate.
- Cut corn kernels off the grilled corn and mix with peach, basil, jalapeño, lemon juice, and salt to make salsa, then refrigerate.
- Heat a skillet over medium heat, add butter, and cook burgers for 5-8 minutes on each side until cooked through.
- Assemble the burgers by spreading aioli on buns, adding burger patties, avocado, bacon, and salsa.
