Ingredients

The burgers

  • 3 tablespoons ghee, avocado oil, or fat of choice
  • 1 large shallot or ½ small red onion, finely diced
  • 1 pound ground beef, 15% fat or higher
  • to taste Diamond Crystal kosher salt
  • to taste freshly ground black pepper
  • 4 teaspoons Dijon-style mustard (or your favorite mustard variety)

The toppings

  • 1 head butter lettuce, separated into leaves
  • 2 medium tomatoes, sliced
  • 4 large eggs, cooked (optional)
  • to taste Whole30 Sriracha or Whole30 ketchup (optional)

Instructions

  1. Heat a skillet over medium low heat and add 1 tablespoon of ghee.
  2. Sauté the finely diced shallots for 3 to 5 minutes until golden and translucent.
  3. Transfer the sautéed shallots to a bowl to cool.
  4. Divide the ground beef into 4 equal portions and shape each into a concave bowl.
  5. Stuff each beef bowl with about a teaspoon of cooled shallots and seal to form a ball.
  6. Flatten the balls into ½-inch thick patties.
  7. Heat a skillet over medium high heat and add 1 tablespoon of ghee.
  8. Season one side of the patties with salt and pepper and place them seasoned-side down in the pan.
  9. Cook for 3 minutes until a crust forms, then spread mustard on top.
  10. Flip the patties and cook for another 2 minutes until desired doneness.
  11. Serve the patties with lettuce and tomatoes, optionally adding a fried egg and sriracha.
