Nomster Burgers
Ingredients

ghee, avocado oil, or fat of choice

shallot or ½ small red onion, finely diced

ground beef, 15% fat or higher

Diamond Crystal kosher salt

Dijon-style mustard (or your favorite mustard variety)

butter lettuce, separated into leaves

Whole30 Sriracha or Whole30 ketchup (optional)
Instructions
- Heat a skillet over medium low heat and add 1 tablespoon of ghee.
- Sauté the finely diced shallots for 3 to 5 minutes until golden and translucent.
- Transfer the sautéed shallots to a bowl to cool.
- Divide the ground beef into 4 equal portions and shape each into a concave bowl.
- Stuff each beef bowl with about a teaspoon of cooled shallots and seal to form a ball.
- Flatten the balls into ½-inch thick patties.
- Heat a skillet over medium high heat and add 1 tablespoon of ghee.
- Season one side of the patties with salt and pepper and place them seasoned-side down in the pan.
- Cook for 3 minutes until a crust forms, then spread mustard on top.
- Flip the patties and cook for another 2 minutes until desired doneness.
- Serve the patties with lettuce and tomatoes, optionally adding a fried egg and sriracha.
