Ingredients

The dough

  • 1 ¼ cups almond flour
  • ¾ cup tahini
  • ¼ cup pumpkin puree
  • ½ cup maple syrup
  • 1 unit egg (or flax egg if vegan)
  • 2 tbsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 heaping cup Enjoy Life Foods dairy free mini chocolate chips
  • 1 scoop collagen peptides (optional)

For topping

  • to taste unit sea salt flakes

Instructions

  1. Mix almond flour, pumpkin pie spice, pumpkin, tahini, maple syrup, collagen peptides (if using), and chocolate chips in a bowl until thick.
  2. Refrigerate the dough for 30 minutes.
  3. Preheat the oven to 350°F.
  4. Add the egg and baking soda to the chilled dough and mix until incorporated.
  5. Scoop the dough to form cookies (10-12 depending on size).
  6. Bake for 10-11 minutes and let them settle before eating.
  7. Sprinkle sea salt flakes on top before serving.
