Ingredients

The dough

  • 1 cup almond flour
  • 1 cup tahini
  • ½ cup maple syrup
  • 1 each egg
  • 1 tsp baking soda
  • 1 heaping cup Enjoy Life Foods dairy free mini chocolate chips
  • 1 scoop collagen peptides (optional)
  • 2 tbsp espresso

For topping

  • to taste sea salt flakes

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, mix almond flour, tahini, maple syrup, collagen peptides (if using), and chocolate chips until combined.
  4. Chill the dough in the refrigerator for 30 minutes.
  5. After chilling, add the egg and baking soda to the dough and mix until fully incorporated.
  6. Scoop the dough to form cookies and place them on the prepared baking sheet.
  7. Bake for 10-11 minutes, slightly undercooking for a chewy texture.
  8. Let the cookies settle before eating and sprinkle sea salt flakes on top.
