Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together the egg and coconut sugar.
- Stir in the almond butter, pumpkin puree, and vanilla.
- Add the almond flour, baking soda, and pumpkin pie spice, and stir until combined.
- Fold in the chocolate chips.
- Refrigerate the dough for at least 30 minutes.
- Roll the dough into balls and place them on the baking sheet, pressing down slightly.
- Bake for about 12 minutes.
