Ingredients

  • 1 unit egg
  • cup coconut sugar
  • cup almond butter

  • cups almond flour
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie spice
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the egg and coconut sugar.
  3. Stir in the almond butter, pumpkin puree, and vanilla.
  4. Add the almond flour, baking soda, and pumpkin pie spice, and stir until combined.
  5. Fold in the chocolate chips.
  6. Refrigerate the dough for at least 30 minutes.
  7. Roll the dough into balls and place them on the baking sheet, pressing down slightly.
  8. Bake for about 12 minutes.
