Ingredients

  • ½ tablespoon vegetable oil
  • ½ large or 1 small jalapeño, minced
  • 2 pieces chipotle peppers, minced
  • 1-2 tablespoons adobo sauce
  • 1 teaspoon garlic powder
  • 16 ounces raspberries
  • cup granulated sugar
  • cup light brown sugar
  • cup apple cider vinegar
  • ¼ cup water
  • 1 ½ teaspoons liquid smoke
  • 1 teaspoon kosher salt
  • 1 tablespoon cornstarch

Instructions

  1. Heat the vegetable oil in a medium saucepan over medium-high heat.
  2. Add the minced jalapeño and cook for 2 minutes until softened.
  3. Stir in the garlic powder, chipotle pepper, and adobo sauce, cooking for 1 minute.
  4. Add the raspberries, granulated sugar, brown sugar, cider vinegar, water, liquid smoke, and kosher salt, then bring to a boil.
  5. Stir in the cornstarch, reduce to a simmer, and cook for 15 minutes until thickened.
  6. Adjust the heat by adding more adobo sauce to taste.
  7. Cool the sauce and refrigerate until ready to use.
