Homemade BBQ Sauce

Ingredients

  • 1–2 tablespoons olive oil
  • ½ cup shallots, finely diced
  • 4 cloves garlic
  • ½ teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 6 ounces tomato paste
  • 1 cup stock or broth
  • ½ cup apple cider vinegar
  • ¼ cup soy sauce or Braggs Liquid Amino Acid
  • cup molasses or maple syrup
  • ¼ cup coconut sugar
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • to taste optional additions (chipotle powder, cayenne, adobo sauce, liquid smoke)

Instructions

  1. Chop shallots and garlic finely or mince in a food processor.
  2. Heat oil in a saucepan over medium heat, add shallots and garlic, and sauté for 3-4 minutes.
  3. Lower heat to medium-low and cook until shallots and garlic are golden and fragrant, about 5 more minutes.
  4. Add thyme, smoked paprika, garlic powder, and tomato paste, and sauté for 1 minute.
  5. Stir in broth, vinegar, soy sauce, molasses, brown sugar, salt, and pepper.
  6. Simmer uncovered for about 10 minutes until slightly thickened, stirring occasionally.
  7. Taste and adjust salt, vinegar, and sweetness as needed.
  8. For heat, add chipotle powder or adobo sauce to taste.
  9. Optionally, add liquid smoke for extra smokiness.
  10. Store in a sealed jar in the fridge.
