Raspberry Chipotle BBQ Chicken

The chicken
Instructions
- Dice the onion and garlic, then cook in vegetable oil until softened.
- Chop the chipotle pepper and reserve 1 Tbsp of adobo sauce.
- Add tomato sauce, raspberry jam, cider vinegar, chopped chipotle pepper, and adobo sauce to the cooked onions and garlic, stir well, and simmer for about 45 minutes.
- Remove skin and excess fat from the chicken thighs.
- Preheat the oven to 375°F.
- Prepare a baking sheet with aluminum foil and non-stick spray, place chicken thighs on it, and brush with BBQ sauce.
- Bake the chicken for 45 minutes, brushing with more sauce at 15 and 30 minutes.
