Raspberry Chipotle BBQ Chicken

Ingredients

The sauce

  • 1 Tbsp vegetable oil
  • ½ medium yellow onion
  • 2 cloves garlic
  • 8 oz can tomato sauce
  • 1 cup raspberry jam
  • ¼ cup cider vinegar
  • 1 pepper chipotle pepper in adobo
  • 1 Tbsp adobo sauce

The chicken

  • 4 lbs chicken thighs

Instructions

  1. Dice the onion and garlic, then cook in vegetable oil until softened.
  2. Chop the chipotle pepper and reserve 1 Tbsp of adobo sauce.
  3. Add tomato sauce, raspberry jam, cider vinegar, chopped chipotle pepper, and adobo sauce to the cooked onions and garlic, stir well, and simmer for about 45 minutes.
  4. Remove skin and excess fat from the chicken thighs.
  5. Preheat the oven to 375°F.
  6. Prepare a baking sheet with aluminum foil and non-stick spray, place chicken thighs on it, and brush with BBQ sauce.
  7. Bake the chicken for 45 minutes, brushing with more sauce at 15 and 30 minutes.
