Ingredients

The chicken

  • 2 lb boneless, skinless chicken breast

The sauce

  • cup raspberry jam or preserves
  • tablespoon chipotles in adobe sauce
  • 1 large jalapeno, minced
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • to taste salt & freshly ground pepper
  • as needed honey
  • 2 tablespoon cornstarch
  • 2 tablespoon water

For serving

  • 12 slider buns slider buns
  • 8 oz goat cheese

Instructions

  1. Place the chicken in the bottom of a large crock pot.
  2. In a bowl, mix raspberry jam, adobe sauce, jalapeno, apple cider vinegar, and lemon juice.
  3. Pour the mixture over the chicken and cook on low for 3-5 hours until tender.
  4. Shred the chicken and return it to the crock pot, seasoning with salt and pepper.
  5. Adjust the sauce's sweetness or spiciness as desired.
  6. Mix cornstarch and water, then add to the sauce in a saucepan over medium-high heat.
  7. Bring to a boil while whisking, then simmer until thick.
  8. Serve the chicken on slider buns topped with goat cheese and sliced jalapenos.
