Instructions
- Place the chicken in the bottom of a large crock pot.
- In a bowl, mix raspberry jam, adobe sauce, jalapeno, apple cider vinegar, and lemon juice.
- Pour the mixture over the chicken and cook on low for 3-5 hours until tender.
- Shred the chicken and return it to the crock pot, seasoning with salt and pepper.
- Adjust the sauce's sweetness or spiciness as desired.
- Mix cornstarch and water, then add to the sauce in a saucepan over medium-high heat.
- Bring to a boil while whisking, then simmer until thick.
- Serve the chicken on slider buns topped with goat cheese and sliced jalapenos.
