Ingredients

The sliders

  • 1 lb ground chicken
  • 1 cup grated parmesan cheese
  • 1 large organic egg
  • ¼ cup butter, melted
  • ¼ tsp red pepper flakes
  • 1 tsp black pepper
  • 1 tsp basil flakes
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • 1 bulb garlic, roasted
  • 3 slices gouda cheese
  • 3 pieces slider burger buns, toasted
  • 1 medium red onion, sliced
  • to taste Dijon mustard
  • to taste arugula

Garlic Aioli

  • 3 cloves roasted garlic, mashed
  • cup mayo
  • 1 tbsp grated parmesan cheese
  • 1 tsp lemon juice
  • 1 tbsp fresh basil, finely chopped
  • 2 tsp olive oil
  • ¼ tsp sea salt

Instructions

  1. Prepare the garlic by cutting the top off the bulb, coating with olive oil, wrapping in foil, and baking at 400°F for 30 minutes.
  2. In a large bowl, combine ground chicken, parmesan cheese, egg, melted butter, red pepper flakes, black pepper, basil flakes, garlic powder, and sea salt. Mix well and form into patties.
  3. Cook the patties in a skillet over medium-high heat for 3 to 4 minutes on each side, adding gouda cheese on top after flipping.
  4. For the aioli, mix the mashed roasted garlic, mayo, parmesan cheese, lemon juice, fresh basil, olive oil, and sea salt until smooth.
  5. Assemble the sliders by spreading Dijon mustard on the bottom bun, adding arugula, the chicken patty, smashed garlic, red onion, and aioli, then topping with the top bun.
