Simple Bruschetta

Ingredients

The topping

  • 3 whole fresh tomatoes, ripe
  • 1 small handful basil leaves
  • 1 teaspoon good-tasting white wine vinegar (or red/balsamic), or to taste
  • ¼ teaspoon sea salt, or to taste
  • 4 tablespoons extra-virgin olive oil, plus more for serving

The bread

  • 3 - 4 slices sourdough or country-style bread (at least ½-inch thick)

The garlic

  • 2 cloves garlic, peeled

Instructions

  1. Rinse and dry the tomatoes, halve them, remove the seeds, and cut into ½-inch pieces.
  2. Tear the basil into small pieces and add to the tomatoes in a bowl.
  3. Add 2 tablespoons of olive oil, a splash of vinegar, and a pinch of salt to the bowl and gently toss.
  4. Preheat a grill or oven to medium-high and brush the remaining olive oil on the bread slices.
  5. Grill or bake the bread until golden brown, flipping when necessary, then rub both sides with garlic.
  6. Top each slice of bread with the tomato mixture and drizzle with additional olive oil.
