Tomato Bruschetta

Ingredients

The topping

  • 2 lb. ripe tomatoes
  • 3 cloves garlic
  • 5 Tbsp. extra-virgin olive oil
  • 1 Tbsp. red wine vinegar
  • ΒΌ cup fresh basil leaves
  • to taste kosher salt
  • to taste freshly ground black pepper

The bread

  • 1 loaf ciabatta or baguette

Instructions

  1. Combine chopped tomatoes and finely grated garlic in a bowl, season with salt and pepper, and mix with olive oil and vinegar. Let marinate for 2-3 hours.
  2. Toast or grill the bread slices until golden brown, about 3 minutes per side.
  3. Rub the toasted bread with the cut side of the remaining garlic clove, then mix the chopped basil into the tomato mixture. Season to taste.
  4. Arrange the bread on a platter and spoon the tomato topping over each slice.
