Tomato Bruschetta

Ingredients

  • 3 tbsp olive oil, divided
  • 5 cloves garlic, minced
  • 8 pieces roma tomatoes
  • 1 tbsp balsamic vinegar
  • ¼ cup shredded parmesan cheese, finely chopped
  • ¼ cup basil, sliced into ribbons
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. 1. Heat a sauté pan over medium heat and add 1 tbsp of olive oil.
  2. 2. Once hot, add the minced garlic and sauté for 2-3 minutes, then remove from heat.
  3. 3. Dice the roma tomatoes into small pieces and place them in a large bowl.
  4. 4. Stir in the remaining 2 tbsp of olive oil.
  5. 5. Add the remaining ingredients to the bowl and stir until well combined.
  6. 6. Taste and adjust salt and pepper as needed.
