Easy Bruschetta

The bread

hearty french bread (14.5 oz), sliced into ½-inch thick slices (about 12 slices)
Instructions
- Heat olive oil in a small skillet over medium-low heat and sauté minced garlic until golden.
- Pour the garlic oil into a large mixing bowl and let it cool.
- Chop the tomatoes and basil, then add them to the bowl with the cooled oil mixture.
- Add parmesan cheese, balsamic vinegar, salt, and pepper to the mixture and toss well.
- Serve the mixture over toasted bread and garnish with more parmesan if desired.
- To toast the bread, align slices on a baking sheet and broil until golden brown on both sides.
