Ingredients

The topping

  • 4-5 pieces ripe roma tomatoes
  • ¼ cup finely chopped red onion
  • ¼ cup fresh basil leaves
  • 2 cloves garlic
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • ½ teaspoon freshly ground black pepper
  • ¾ teaspoon salt

The bread

  • 1 piece baguette French bread
  • 2 tablespoons unsalted butter

Instructions

  1. Wash and finely dice the tomatoes, removing seeds and jelly; lightly drain.
  2. In a large bowl, combine diced tomatoes, chopped onions, and sliced basil.
  3. In a small bowl, mix garlic, olive oil, balsamic vinegar, black pepper, and salt, then pour over the tomato mixture and mix well.
  4. Allow the mixture to sit at room temperature for about 1 hour.
  5. Cut the baguette diagonally into ¾ inch thick slices.
  6. Spread melted butter and garlic mix on the sliced bread.
  7. Toast the bread in a pan or in the oven until lightly browned.
  8. Top the toasted bread with the bruschetta mixture and serve.
