Ingredients

The topping

  • 6-7 pieces ripe plum or beefsteak tomatoes, diced
  • 2 cloves garlic, minced
  • ¼ small red onion, chopped
  • 1 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 6-8 leaves fresh basil, chopped
  • to taste kosher salt
  • to taste freshly ground black pepper

The bread

  • 16 oz baguette or French bread
  • 1-2 cloves garlic, peeled
  • as needed olive oil spray

Instructions

  1. Combine tomatoes, minced garlic, chopped red onion, balsamic vinegar, olive oil, salt, pepper, and chopped basil in a bowl and set aside.
  2. Slice the baguette into ½ inch thick slices.
  3. Spray the bread slices lightly with olive oil and place them on a tray.
  4. Toast the bread under a broiler until golden, being careful not to burn it.
  5. Once toasted, rub each slice with a whole garlic clove.
  6. Place the toasted bread on a platter and top with the tomato mixture.
  7. Serve immediately to avoid sogginess.
