Tomato and Basil Bruschetta

Ingredients

  • 1 tablespoon olive oil
  • 2 pints grape tomatoes
  • to taste black pepper
  • 2 teaspoons minced garlic
  • 3 sprays olive oil from spray bottle
  • 1 long French baguette
  • 4 finely chopped scallions
  • ½ cup finely sliced basil
  • to taste salt

Instructions

  1. 1. Preheat the oven to 400°F.
  2. 2. Pour olive oil into a baking pan and tilt to cover the bottom.
  3. 3. Add tomatoes to the pan and mix to coat with oil, then sprinkle with black pepper and add garlic.
  4. 4. Spray olive oil on top and mix well.
  5. 5. Roast in the oven for 20 minutes until some tomatoes burst.
  6. 6. Slice the baguette into approximately 24 slices and toast lightly.
  7. 7. Remove the tomato mixture from the oven and transfer to a bowl, adding scallions, basil, and salt.
  8. 8. Mash the tomatoes and mix well, then spread the mixture on top of the toasted bread.
