Tomato Basil Bruschetta

Ingredients

The topping

  • 2 pounds ripe tomatoes
  • ½ teaspoon fine sea salt
  • ½ cup finely chopped white onion
  • ½ cup chopped fresh basil
  • 2 cloves garlic

The bread

  • 1 baguette French bread
  • 4 to 5 tablespoons extra-virgin olive oil

The garnish

  • to taste thick balsamic vinegar
  • to taste Maldon flaky sea salt

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Dice the tomatoes and mix them with salt, onion, basil, and garlic in a bowl. Set aside to marinate.
  3. Slice the baguette diagonally into ½-inch pieces and brush both sides with olive oil.
  4. Arrange the slices on the baking sheet and bake for 6 to 9 minutes until golden and crisp.
  5. Drain excess juice from the tomato mixture and add remaining olive oil, adjusting salt to taste.
  6. Top each toast with the tomato mixture, drizzle with balsamic vinegar, and sprinkle with flaky salt.
