Tomato and Basil Bruschetta

Ingredients

The bruschetta

  • 2 cups cherry or grape tomatoes, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • cup basil, chopped
  • to taste salt
  • to taste pepper
  • to taste balsamic glaze (optional)

The baguette slices

  • 1 large whole wheat baguette, sliced into ½-inch slices
  • 2 tablespoons olive oil, for brushing
  • 1 clove garlic, sliced in half

Instructions

  1. Preheat the oven to 400°F.
  2. In a bowl, mix sliced tomatoes with minced garlic, olive oil, balsamic vinegar, chopped basil, salt, and pepper. Set aside to marinate.
  3. Slice the baguette into about 16 slices and brush each slice lightly with olive oil.
  4. Place the oiled-side down on a baking sheet and toast in the oven for 8 to 10 minutes until lightly toasted.
  5. Once toasted, rub each slice with the cut side of garlic.
  6. Spoon the tomato mixture onto each slice of garlic bread and drizzle with balsamic glaze if desired.
