Easy Bruschetta

Ingredients

For the bruschetta

  • 3-4 cups finely chopped ripe Roma tomatoes
  • ½ cup minced basil
  • cup minced red onion
  • 3 cloves garlic, minced
  • cup olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp salt
  • 1 tsp ground pepper
  • to taste balsamic glaze

For the crostini

  • 1 baguette sliced into 1-inch thick slices
  • 1 clove garlic
  • to taste tbsp olive oil

Instructions

  1. Combine chopped tomatoes, basil, minced garlic, olive oil, red wine vinegar, salt, and pepper in a small bowl and let it sit in the fridge.
  2. Preheat the oven to 400°F.
  3. Slice the baguette into 1-inch thick slices and brush one side with olive oil.
  4. Place the baguette slices on a baking sheet and toast for 10 minutes, flipping halfway through.
  5. Rub the toasted side of the crostini with the cut side of a garlic clove.
  6. Top the olive oil side of each crostini with the bruschetta mixture and drizzle with balsamic glaze if desired.
