Healthy Banana Carrot Cake Muffins

Instructions
- Preheat the oven to 350°F and line 9 cups of a muffin pan.
- Chop or grate the carrots into small pieces.
- In a large bowl, combine the chopped carrots, mashed banana, almond butter, apple cider vinegar, and vanilla extract, and stir together.
- Add the spelt flour, baking powder, baking soda, cinnamon, nutmeg, and salt, and stir until almost fully incorporated.
- Fold in the raisins and walnuts until all dry ingredients are mixed in.
- Distribute the batter evenly into the muffin cups and bake for 14-17 minutes or until a toothpick comes out clean.
- Allow the muffins to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
