Ingredients

  • 1 cup carrots, chopped
  • ½ cup banana, mashed
  • ¼ cup almond butter
  • 3 tsp apple cider vinegar
  • ½ tsp vanilla extract
  • 1 cup spelt flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • tsp nutmeg
  • tsp salt
  • ½ cup raisins
  • ½ cup walnuts

Instructions

  1. Preheat the oven to 350°F and line 9 cups of a muffin pan.
  2. Chop or grate the carrots into small pieces.
  3. In a large bowl, combine the chopped carrots, mashed banana, almond butter, apple cider vinegar, and vanilla extract, and stir together.
  4. Add the spelt flour, baking powder, baking soda, cinnamon, nutmeg, and salt, and stir until almost fully incorporated.
  5. Fold in the raisins and walnuts until all dry ingredients are mixed in.
  6. Distribute the batter evenly into the muffin cups and bake for 14-17 minutes or until a toothpick comes out clean.
  7. Allow the muffins to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
