Instructions
- Preheat the oven to 350°F and line 9 muffin cups. Grate or process the carrots into small pieces. In a large bowl, mix chopped carrots, mashed banana, almond butter, apple cider vinegar, and vanilla extract. Add spelt flour, baking powder, baking soda, cinnamon, nutmeg, and salt, and stir until almost combined. Stir in raisins and walnuts. Divide the batter among 9 muffin cups and bake for 14-17 minutes until a toothpick comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
