Ingredients

The Sauce

  • cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon Sriracha or similar spicy chili sauce
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon fresh lime juice

The Chicken Wraps

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon canola oil or grapeseed oil
  • 2 cups broccoli slaw
  • 1 cup shelled edamame
  • ½ cup shredded carrots
  • ½ cup finely chopped green onions
  • ¼ cup dry roasted salted peanuts
  • to taste chopped fresh cilantro
  • 4 whole wheat tortillas

Instructions

  1. Mix all sauce ingredients in a small bowl and set aside.
  2. Cut chicken into bite-sized pieces and sauté in half the oil until fully cooked.
  3. Toss cooked chicken with ¼ cup of the peanut sauce and reserve the rest for serving.
  4. Sauté broccoli slaw, edamame, carrots, and half the green onions until crisp-tender.
  5. Spread reserved sauce on each tortilla, then top with chicken, veggies, peanuts, and cilantro.
  6. Wrap tightly and enjoy.
