Ingredients

The chicken and seasoning

The pasta

  • 12 oz penne pasta

The sauce

  • 1 cup heavy cream
  • ¼ cup chicken broth
  • 2 tbsp corn starch
  • ¾ cup sun dried tomatoes, chopped if needed
  • ¼ cup fresh basil, roughly chopped
  • 3 cups spinach

The aromatics

  • 1 unit shallot, diced
  • 4 cloves garlic, minced

Optional toppings

Instructions

  1. Cut chicken into bite-sized pieces and mix Italian seasoning, sea salt, and pepper in a bowl.
  2. Boil water and cook pasta according to package instructions, then drain.
  3. Heat olive oil in a skillet over medium heat, add chicken, and sprinkle with seasoning.
  4. Cook chicken for 6-8 minutes until browned, stirring occasionally.
  5. Prepare shallot, garlic, and basil while chicken cooks.
  6. Whisk together heavy cream, corn starch, and chicken broth.
  7. Add garlic and shallot to the skillet with chicken, cooking for 1-2 minutes.
  8. Pour in the cream mixture and scrape the pan to deglaze, then simmer to thicken.
  9. Add sun-dried tomatoes, basil, and spinach, cooking until spinach wilts.
  10. Combine cooked pasta with the chicken mixture, mixing well to coat.
  11. Serve immediately, optionally topped with parsley and parmesan.
