Ingredients

The chicken

  • 16-20 oz bone-in chicken thighs
  • 1 tsp olive oil
  • 2 tsp Italian Seasoning
  • to taste salt and pepper
  • 1 cup chicken broth

The sauce

  • 4 oz cream cheese
  • ¾ cup milk
  • 2 tbsp heavy whipping cream
  • ¼ cup sun-dried tomatoes
  • ¼ cup grated Parmesan Reggiano cheese
  • 3 cloves garlic, minced
  • cups fresh spinach
  • 1 tbsp cornstarch
  • 1 tbsp water

Instructions

  1. 1. Drizzle olive oil into the Instant Pot and set to sauté.
  2. 2. Season chicken with Italian seasoning, salt, and pepper, then brown on both sides for 2-3 minutes.
  3. 3. Add chicken broth and remaining Italian seasoning, then seal the pot and cook on high pressure for 14 minutes.
  4. 4. Quick release the steam and remove the chicken.
  5. 5. Add milk, sun-dried tomatoes, cream cheese, heavy cream, Parmesan, garlic, and spinach to the pot.
  6. 6. Set to sauté and cook for 3-4 minutes until cheese melts and spinach wilts.
  7. 7. Combine cornstarch and water in a bowl, then add to the pot to thicken the sauce.
  8. 8. Return chicken to the pot or serve on a dish with sauce drizzled over.
