Instructions
- 1. Drizzle olive oil into the Instant Pot and set to sauté.
- 2. Season chicken with Italian seasoning, salt, and pepper, then brown on both sides for 2-3 minutes.
- 3. Add chicken broth and remaining Italian seasoning, then seal the pot and cook on high pressure for 14 minutes.
- 4. Quick release the steam and remove the chicken.
- 5. Add milk, sun-dried tomatoes, cream cheese, heavy cream, Parmesan, garlic, and spinach to the pot.
- 6. Set to sauté and cook for 3-4 minutes until cheese melts and spinach wilts.
- 7. Combine cornstarch and water in a bowl, then add to the pot to thicken the sauce.
- 8. Return chicken to the pot or serve on a dish with sauce drizzled over.
