Ingredients

The chicken

  • pounds chicken breasts, boneless, skinless
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter

The sauce

  • 2 ounces shallots, chopped
  • ½ teaspoon crushed red pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh thyme leaves
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 tablespoon ketchup (or tomato paste)
  • ½ cup dry white wine
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ½ cup grated Parmigiano Reggiano
  • 1 teaspoon red wine vinegar
  • 1 teaspoon honey (or maple syrup)
  • to taste fresh basil leaves, for garnish

Instructions

  1. Pat dry the chicken breasts and season with salt and pepper.
  2. Heat a pot with olive oil and half of the butter, then sear the chicken until golden brown.
  3. Remove the chicken and set aside, covering to keep warm.
  4. In the same pot, sauté shallots, crushed red pepper, oregano, and thyme until tender.
  5. Add garlic and sun-dried tomatoes, cooking until fragrant.
  6. Stir in ketchup, then add white wine and chicken broth, scraping the pot for flavor.
  7. Reduce heat and stir in heavy cream, simmering until the sauce thickens.
  8. Return the chicken to the pot, coating with the sauce.
  9. Turn off heat and stir in Parmigiano Reggiano, red wine vinegar, and honey.
  10. Finish with remaining butter and garnish with fresh basil.
