Instructions
- Pat dry the chicken breasts and season with salt and pepper.
- Heat a pot with olive oil and half of the butter, then sear the chicken until golden brown.
- Remove the chicken and set aside, covering to keep warm.
- In the same pot, sauté shallots, crushed red pepper, oregano, and thyme until tender.
- Add garlic and sun-dried tomatoes, cooking until fragrant.
- Stir in ketchup, then add white wine and chicken broth, scraping the pot for flavor.
- Reduce heat and stir in heavy cream, simmering until the sauce thickens.
- Return the chicken to the pot, coating with the sauce.
- Turn off heat and stir in Parmigiano Reggiano, red wine vinegar, and honey.
- Finish with remaining butter and garnish with fresh basil.
