Instructions
- Heat olive oil in a skillet or pot over medium heat and add diced chicken, onion powder, smoked paprika, Italian seasoning, salt, and pepper.
- Cook for 4-5 minutes until the chicken is seared on both sides, then remove the chicken and set aside.
- Increase the heat to medium-high and add chicken broth, heavy cream, garlic, sun-dried tomatoes, Italian seasoning, salt, and pepper to the pot.
- Once the mixture boils, add the pasta and ensure it is covered in the sauce.
- Reduce heat to low, cover the pot, and simmer until the pasta is al dente, about 10-15 minutes.
- Stir in Parmesan cheese and spinach, then fold in the chicken before serving.
