Ingredients

The chicken

  • 4 8-oz Boneless skinless chicken breasts

The seasoning

  • ¾ tsp Sea salt
  • ¼ tsp Black pepper
  • 1 tbsp Olive oil
  • 2 cloves Garlic (minced)

The sauce

  • ½ cup Chicken broth (reduced sodium)
  • 1 cup Heavy cream (or coconut cream for dairy-free)
  • ½ cup Sun-dried tomatoes (packed in oil, drained and julienned)
  • 1 tsp Italian seasoning
  • ¼ cup Grated parmesan cheese

The garnish

  • ¼ cup Fresh basil (cut into ribbons)

Instructions

  1. Pat the chicken breasts dry and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 4-8 minutes per side until cooked through.
  3. Remove the chicken from the pan, cover to keep warm, and set aside.
  4. Add minced garlic to the skillet and cook until fragrant.
  5. Add chicken broth, heavy cream, sun-dried tomatoes, and Italian seasoning; bring to a gentle boil and simmer until reduced by half.
  6. Reduce heat to low, stir in parmesan cheese until thickened, and adjust seasoning if needed.
  7. Return the chicken to the pan, spoon sauce over it, and warm for 1-2 minutes.
  8. Garnish with basil ribbons before serving.
