One-Pan Marry Me Chicken Orzo

Instructions
- Prepare the chicken by patting it dry and cutting it into cubes.
- Heat a skillet over medium heat and add olive oil.
- Add the chicken to the skillet and cook for 2-3 minutes until the edges start to cook.
- Stir in sun-dried tomatoes, garlic, Italian seasoning, paprika, salt, and pepper, and cook for an additional 3-4 minutes.
- Add orzo and broth to the skillet, stir well, and reduce heat to medium.
- Cover the pan and cook for 12 minutes, stirring occasionally to prevent sticking.
- Once the orzo is cooked, add coconut milk or cream and spinach, stirring until the spinach wilts.
- Finally, stir in freshly grated parmesan cheese and serve immediately.
