Ingredients

  • 1.5 pounds Boneless, Skinless Chicken breast
  • 2 tablespoons Olive Oil
  • 4-5 cloves Garlic
  • ¾ cup Sun-Dried Tomatoes
  • 2 teaspoons Italian seasoning
  • 2 teaspoons Paprika
  • ½ teaspoon Kosher Salt
  • 1 teaspoon Ground Black Pepper
  • 1 cup Orzo
  • cups Chicken Broth or Water
  • ¾ cup Full-Fat Coconut Milk or Heavy Cream
  • 2 large handfuls Fresh Spinach
  • ¾ cup Parmesan Cheese

Instructions

  1. Prepare the chicken by patting it dry and cutting it into cubes.
  2. Heat a skillet over medium heat and add olive oil.
  3. Add the chicken to the skillet and cook for 2-3 minutes until the edges start to cook.
  4. Stir in sun-dried tomatoes, garlic, Italian seasoning, paprika, salt, and pepper, and cook for an additional 3-4 minutes.
  5. Add orzo and broth to the skillet, stir well, and reduce heat to medium.
  6. Cover the pan and cook for 12 minutes, stirring occasionally to prevent sticking.
  7. Once the orzo is cooked, add coconut milk or cream and spinach, stirring until the spinach wilts.
  8. Finally, stir in freshly grated parmesan cheese and serve immediately.
