Baked Asparagus with Mustard Dill Sauce

Ingredients

The asparagus

  • 2 lb. asparagus spears, trimmed
  • 1 Tbsp olive oil
  • to taste Salt and pepper

The sauce

  • ½ cup low sodium chicken broth
  • 4 Tbsp Dijon mustard
  • 1 Tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 Tbsp chopped fresh dill

Instructions

  1. Preheat the oven to 425°F.
  2. Toss the asparagus with olive oil and season with salt and pepper.
  3. Arrange the asparagus in a small baking dish or sheet pan and bake for 15 to 20 minutes until crisp and tender.
  4. While the asparagus is baking, whisk together the chicken broth, Dijon mustard, lemon juice, and garlic, seasoning with salt and pepper as needed.
  5. Once the asparagus is done baking, transfer it to a serving dish and drizzle with the mustard sauce.
  6. Top with fresh dill, serve, and enjoy!
