The asparagus
Instructions
- In a medium bowl, whisk together the Dijon mustard, red wine vinegar, and olive oil.
- Add the chopped parsley and season with salt and pepper.
- Steam or boil the asparagus for 2-3 minutes until tender.
- Drain the asparagus and run it under cold water to stop the cooking process.
- Transfer the asparagus to a serving dish and drizzle with the vinaigrette.
- Serve warm or chilled.
