Ingredients

The vinaigrette

  • 1 tsp Dijon Mustard
  • 1 ½ tbsp red wine vinegar
  • 1 tbsp extra virgin olive oil
  • 2 tsp fresh chopped parsley
  • to taste kosher salt
  • to taste pepper

The asparagus

  • 1 lb thin asparagus

Instructions

  1. In a medium bowl, whisk together the Dijon mustard, red wine vinegar, and olive oil.
  2. Add the chopped parsley and season with salt and pepper.
  3. Steam or boil the asparagus for 2-3 minutes until tender.
  4. Drain the asparagus and run it under cold water to stop the cooking process.
  5. Transfer the asparagus to a serving dish and drizzle with the vinaigrette.
  6. Serve warm or chilled.
