Taco Assembly

Instructions
- 1. Warm olive oil in a pot over medium heat and sauté onion and garlic until softened.
- 2. Add tomato paste, cumin, and chili powder, and sauté for another minute.
- 3. Stir in rinsed quinoa and vegetable broth or water, bring to a boil, then cover and simmer for 15 minutes.
- 4. Remove from heat and let rest covered for 5 minutes, then fluff quinoa and stir in black beans, salt, and pepper.
- 5. For the avocado sauce, blend all ingredients in a food processor until smooth and season with salt.
- 6. Warm tortillas in a skillet, then assemble tacos with quinoa filling, avocado sauce, romaine, and any additional garnishes.
