Ingredients

  • 1 cup uncooked quinoa
  • 1 clove garlic
  • ½ tsp salt
  • ½ Tbsp chili powder
  • ¼ tsp ground cumin
  • ¼ tsp dried oregano
  • ¼ tsp smoked paprika
  • 2 cups cooked black beans
  • 1 recipe pico de gallo
  • 1 whole avocado
  • 16 small corn tortillas
  • ¼ bunch fresh cilantro

Instructions

  1. Rinse the quinoa thoroughly to remove bitterness.
  2. Combine rinsed quinoa, minced garlic, salt, chili powder, cumin, oregano, smoked paprika, and water in a pot.
  3. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  4. Turn off the heat and let it sit covered for an additional 10 minutes.
  5. Prepare the pico de gallo and rinse the black beans.
  6. Fluff the cooked quinoa and mix in the drained black beans.
  7. Toast the tortillas in a skillet until golden brown.
  8. Assemble the tacos with the quinoa/black bean mixture, pico de gallo, avocado, and cilantro.
