Instructions
- Rinse the quinoa thoroughly to remove bitterness.
- Combine rinsed quinoa, minced garlic, salt, chili powder, cumin, oregano, smoked paprika, and water in a pot.
- Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
- Turn off the heat and let it sit covered for an additional 10 minutes.
- Prepare the pico de gallo and rinse the black beans.
- Fluff the cooked quinoa and mix in the drained black beans.
- Toast the tortillas in a skillet until golden brown.
- Assemble the tacos with the quinoa/black bean mixture, pico de gallo, avocado, and cilantro.
