Instructions
- Preheat the water bath to 77C/170F.
- Blend the eggs, cream cheese, grated Gruyere, salt, and pepper until smooth.
- Cook the bacon until crispy, then crush it and set aside.
- In the same pan, cook the mushrooms until tender, then add spinach and garlic, cooking until translucent.
- Prepare six jars, adding bacon and Gruyere to two jars, spinach and mushrooms to another two, and egg whites with roasted red peppers to the last two.
- Pour the blended egg mixture over the ingredients in each jar.
- Close the lids and submerge the jars in the water bath for 40 minutes.
- Remove the jars from the water bath and use a butter knife to gently push out the egg bites.
