Ingredients

Base Ingredients

  • 6 large eggs
  • ½ cup Gruyere cheese, grated
  • ¼ cup cream cheese, softened
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Bacon and Gruyere Variation

  • ¼ cup Gruyere cheese
  • 4 slices bacon

Spinach and Mushroom Variation

  • ¼ cup baby spinach, loosely packed
  • ¼ cup mushrooms, sliced
  • 1 tablespoon garlic, minced

Egg White and Roasted Red Pepper Variation

  • 2 large egg whites
  • 2 tablespoons roasted red peppers

Instructions

  1. Preheat the water bath to 77C/170F.
  2. Blend the eggs, cream cheese, grated Gruyere, salt, and pepper until smooth.
  3. Cook the bacon until crispy, then crush it and set aside.
  4. In the same pan, cook the mushrooms until tender, then add spinach and garlic, cooking until translucent.
  5. Prepare six jars, adding bacon and Gruyere to two jars, spinach and mushrooms to another two, and egg whites with roasted red peppers to the last two.
  6. Pour the blended egg mixture over the ingredients in each jar.
  7. Close the lids and submerge the jars in the water bath for 40 minutes.
  8. Remove the jars from the water bath and use a butter knife to gently push out the egg bites.
