Healthy Sous Vide Egg Bites with Bacon

The Bacon
For Greasing

refined coconut or avocado oil
Instructions
- Preheat the oven to 200º F.
- Blend the cashews, tahini, lemon juice, apple cider vinegar, and water until smooth.
- In a bowl, whisk the eggs and then stir in the cashew mixture and salt.
- Prepare a mini muffin pan by spraying it with oil or using a silicone pan.
- Fill the muffin pan with the egg mixture and top with a piece of bacon.
- Pour water into the baking sheet until it's halfway up the sides of the muffin pan.
- Bake in the oven for 90 to 180 minutes, checking for doneness.
- Once cooked, remove from the oven and take the muffin pan out of the water bath.
