Healthy Sous Vide Egg Bites with Bacon

Ingredients

The Egg Mixture

  • 10 pieces eggs
  • ½ cup raw cashews
  • 1 teaspoon tahini
  • 4 teaspoons fresh lemon juice
  • 1 teaspoon apple cider vinegar
  • ½ cup water
  • 1 teaspoon salt

The Bacon

  • 6-8 slices bacon

For Greasing

  • 1 spray refined coconut or avocado oil

Instructions

  1. Preheat the oven to 200º F.
  2. Blend the cashews, tahini, lemon juice, apple cider vinegar, and water until smooth.
  3. In a bowl, whisk the eggs and then stir in the cashew mixture and salt.
  4. Prepare a mini muffin pan by spraying it with oil or using a silicone pan.
  5. Fill the muffin pan with the egg mixture and top with a piece of bacon.
  6. Pour water into the baking sheet until it's halfway up the sides of the muffin pan.
  7. Bake in the oven for 90 to 180 minutes, checking for doneness.
  8. Once cooked, remove from the oven and take the muffin pan out of the water bath.
