Cheesecake Stuffed Strawberries

Instructions
- Hollow out the insides of the strawberries using a melon baller or small spoon.
- Optionally, slice the tips off the bottom of the strawberries to help them stand up.
- Beat the cream cheese in a bowl until smooth, about 2-3 minutes.
- Add the powdered sugar and mix until well combined.
- Incorporate the heavy cream and vanilla extract, beating for an additional minute.
- Transfer the cheesecake mixture into a piping bag or resealable plastic bag and snip off the tip.
- Pipe the cheesecake mixture into each hollowed strawberry.
- Sprinkle the tops with graham cracker crumbs and serve, garnished with fresh mint if desired.
