Ingredients

  • 1 cup Wholesome Yum Coconut Flour
  • cup Golden flax seed meal
  • ¼ cup Sunflower seeds
  • ¼ cup Pumpkin seeds
  • ¼ cup Chia seeds
  • ¼ cup Sesame seeds
  • ¼ cup Hemp hearts
  • 1 ½ tbsp Baking powder
  • 1 tsp Sea salt
  • 12 large Eggs
  • ¾ cup Unsalted butter

Instructions

  1. Preheat the oven to 325°F (163°C) and line a loaf pan with parchment paper.
  2. In a large bowl, combine the coconut flour, flax seed meal, seeds, baking powder, and sea salt.
  3. Mix in the melted butter until the mixture is crumbly.
  4. In another bowl, beat the eggs until they triple in volume, then fold them into the batter and let it thicken.
  5. Transfer the batter to the prepared pan, round the top, and optionally sprinkle more seeds on top.
  6. Bake for about 50 minutes, then tent with foil and continue baking until the internal temperature reaches 170°F (77°C).
  7. Allow the bread to cool completely in the pan before removing it.
