Ingredients

  • 3 pieces very ripe bananas
  • ¾ cup coconut flour
  • 5 large eggs
  • cup coconut sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350ºF and line a 9-inch by 5-inch loaf pan with parchment paper.
  2. In a large bowl, mash the bananas with a fork.
  3. Add the coconut flour, eggs, coconut sugar, cinnamon, baking soda, baking powder, salt, and vanilla to the bowl.
  4. Whisk the batter well until smooth, breaking up any lumps.
  5. Pour the batter into the lined loaf pan.
  6. Bake for 45 to 55 minutes, until the center has risen and feels firm to the touch.
  7. Cool completely before slicing and serving.
