Instructions
- Preheat the oven to 350ºF and line a 9-inch by 5-inch loaf pan with parchment paper.
- In a large bowl, mash the bananas with a fork.
- Add the coconut flour, eggs, coconut sugar, cinnamon, baking soda, baking powder, salt, and vanilla to the bowl.
- Whisk the batter well until smooth, breaking up any lumps.
- Pour the batter into the lined loaf pan.
- Bake for 45 to 55 minutes, until the center has risen and feels firm to the touch.
- Cool completely before slicing and serving.
