Ingredients

  • 3 large ripe bananas
  • cups oat flour
  • 3 large eggs
  • 1 cup coconut sugar
  • ¼ cup olive oil
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon (optional)
  • 1 teaspoon vanilla extract
  • ½ teaspoon fine sea salt

Instructions

  1. Preheat the oven to 350ºF.
  2. Mash the ripe bananas in a bowl until smooth.
  3. Combine all ingredients in a large bowl and mix until a smooth batter forms.
  4. Grease a 9-inch by 5-inch loaf pan and line the bottom with parchment paper.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 40 to 50 minutes, until the top rises and cracks.
  7. Allow the bread to cool completely before slicing.
