Ingredients

  • cups oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ½ cup coconut sugar
  • cups mashed bananas (about 2 large bananas)
  • 3 large eggs
  • ¼ cup refined coconut oil, melted
  • 2 teaspoons vanilla extract
  • cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare an 8”x4” loaf pan with parchment paper.
  2. In a large bowl, whisk together the oat flour, baking soda, baking powder, cinnamon, and coconut sugar.
  3. In another bowl, whisk together the mashed bananas, eggs, melted coconut oil, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until just mixed, then fold in ½ cup of chocolate chips.
  5. Transfer the batter to the prepared loaf pan and sprinkle with 2 tablespoons of chocolate chips.
  6. Bake for 55-60 minutes, or until a toothpick comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool for another 20-30 minutes before slicing.
