Banana Bread with Oat Flour

Instructions
- Preheat the oven to 350°F and prepare an 8”x4” loaf pan with parchment paper.
- In a large bowl, whisk together the oat flour, baking soda, baking powder, cinnamon, and coconut sugar.
- In another bowl, whisk together the mashed bananas, eggs, melted coconut oil, and vanilla extract.
- Combine the wet and dry ingredients, stirring until just mixed, then fold in ½ cup of chocolate chips.
- Transfer the batter to the prepared loaf pan and sprinkle with 2 tablespoons of chocolate chips.
- Bake for 55-60 minutes, or until a toothpick comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool for another 20-30 minutes before slicing.
