Instructions
- Preheat the oven to 350°F and toast the oats for 8 to 10 minutes until golden.
- Line a 9x5-inch loaf pan with parchment paper and mist with nonstick spray.
- In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt, then stir in the toasted oats.
- In another bowl, mash the bananas and mix in the honey, melted butter, milk, yogurt, eggs, and vanilla.
- Combine the dry ingredients with the wet ingredients, stirring gently until just combined.
- Pour the batter into the loaf pan, smooth the top, and sprinkle with the remaining oats.
- Bake for 30 minutes, then cover with foil and bake for an additional 35 to 45 minutes until a knife comes out clean.
- Cool in the pan for 1 hour before transferring to a wire rack to cool completely.
