Ingredients

The batter

  • cups old fashioned rolled oats
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • cups mashed very ripe bananas
  • cup honey or pure maple syrup
  • 4 tablespoons unsalted butter, melted
  • ¼ cup milk
  • 3 tablespoons nonfat plain Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract

For topping

  • 1 tablespoon old fashioned rolled oats

Instructions

  1. Preheat the oven to 350°F and toast the oats for 8 to 10 minutes until golden.
  2. Line a 9x5-inch loaf pan with parchment paper and mist with nonstick spray.
  3. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt, then stir in the toasted oats.
  4. In another bowl, mash the bananas and mix in the honey, melted butter, milk, yogurt, eggs, and vanilla.
  5. Combine the dry ingredients with the wet ingredients, stirring gently until just combined.
  6. Pour the batter into the loaf pan, smooth the top, and sprinkle with the remaining oats.
  7. Bake for 30 minutes, then cover with foil and bake for an additional 35 to 45 minutes until a knife comes out clean.
  8. Cool in the pan for 1 hour before transferring to a wire rack to cool completely.
