Instructions
- 1. Preheat the oven to 350°F and grease a medium loaf pan.
- 2. Blend the rolled oats in a high-powered blender until they form a fine flour.
- 3. Add baking powder, baking soda, and salt to the blended oats and mix briefly.
- 4. In the same blender, combine bananas, eggs, coconut milk, melted coconut oil, and maple syrup, and blend to combine.
- 5. Transfer the wet ingredients to a large bowl and stir in the dry ingredients until mixed.
- 6. Pour the batter into the prepared loaf pan.
- 7. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
- 8. Cool the bread in the pan for 10 minutes, then remove and cool completely on a wire rack.
