Ingredients

  • 2 ¼ cups rolled oats
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 very ripe bananas about 1 lb unpeeled
  • 2 large eggs
  • cup coconut milk or other milk of choice
  • cup melted coconut oil
  • cup pure maple syrup

Instructions

  1. 1. Preheat the oven to 350°F and grease a medium loaf pan.
  2. 2. Blend the rolled oats in a high-powered blender until they form a fine flour.
  3. 3. Add baking powder, baking soda, and salt to the blended oats and mix briefly.
  4. 4. In the same blender, combine bananas, eggs, coconut milk, melted coconut oil, and maple syrup, and blend to combine.
  5. 5. Transfer the wet ingredients to a large bowl and stir in the dry ingredients until mixed.
  6. 6. Pour the batter into the prepared loaf pan.
  7. 7. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
