Ingredients

  • 2 cups oat flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup oil
  • 2 large eggs
  • ½ cup sugar
  • 3 large bananas
  • 1 teaspoon vanilla extract
  • ½ cup walnuts

Instructions

  1. Preheat the oven to 180C/350F and prepare a loaf pan.
  2. In a small bowl, mix together oat flour, baking powder, and salt.
  3. In a large mixing bowl, whisk together oil, eggs, sugar, mashed bananas, and vanilla extract until smooth.
  4. Combine the dry ingredients with the wet ingredients until just mixed.
  5. Fold in the chopped walnuts.
  6. Transfer the batter into the prepared loaf pan.
  7. Bake for 35-40 minutes until a skewer comes out clean.
  8. Allow the bread to cool completely in the pan before slicing.
