Instructions
- Preheat the oven to 350°F and grease and flour a loaf pan.
- In a large mixing bowl, combine the mashed bananas, coconut milk, melted coconut oil, apple cider vinegar, and vanilla extract, then whisk until well combined.
- Add the eggs and mix until just incorporated.
- In a separate bowl, combine the flour, shredded coconut, walnuts, corn starch, baking soda, baking powder, and salt, and mix well.
- Add the dry ingredients to the wet mixture and mix with a rubber spatula until combined.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 60 minutes, or until the top is brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and cool on a rack for at least 30 minutes before slicing and serving.
