Ingredients

Wet Ingredients

  • 3-4 large over-ripe bananas, mashed
  • 2 large eggs
  • 1 cup full fat coconut milk, at room temperature
  • ½ cup coconut oil, melted
  • 1 tbsp apple cider vinegar
  • 1 tbsp pure vanilla extract

Dry Ingredients

  • cups whole wheat flour
  • 1 cup chopped walnuts
  • 1 cup shredded unsweetened coconut
  • 2 tbsp corn starch
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt

Instructions

  1. Preheat the oven to 350°F and grease and flour a loaf pan.
  2. In a large mixing bowl, combine the mashed bananas, coconut milk, melted coconut oil, apple cider vinegar, and vanilla extract, then whisk until well combined.
  3. Add the eggs and mix until just incorporated.
  4. In a separate bowl, combine the flour, shredded coconut, walnuts, corn starch, baking soda, baking powder, and salt, and mix well.
  5. Add the dry ingredients to the wet mixture and mix with a rubber spatula until combined.
  6. Pour the batter into the prepared loaf pan and spread evenly.
  7. Bake for 60 minutes, or until the top is brown and a toothpick inserted in the center comes out clean.
  8. Remove from the oven and cool on a rack for at least 30 minutes before slicing and serving.
