Grilled Cauliflower Steak with Orange Mint Chimichurri

Instructions
- Preheat the pellet smoker, grill, or oven to 400°F.
- In a small food processor, combine all herb sauce ingredients and pulse until well mixed. Set aside.
- Remove green leaves from the base of the cauliflower and cut the head in half. Cut each half into 2 steaks about 1-inch thick.
- Rub the cauliflower steaks with avocado oil and season with salt and pepper.
- Place the cauliflower steaks on the grill or on a rimmed baking sheet for the oven.
- Cook for 15 minutes, flip the steaks, and continue cooking for another 10 minutes or until tender.
- Serve the steaks topped with the herb sauce and sprinkled with pistachios.
