Grilled Cauliflower Steak with Orange Mint Chimichurri

Ingredients

Cauliflower Steaks

  • 1 large head cauliflower
  • to taste avocado oil
  • to taste salt
  • to taste pepper

Herb Sauce

  • ½ cup roughly chopped parsley
  • ¼ cup chopped mint
  • 1 clove garlic
  • ¼ cup avocado oil
  • zest of 1 orange
  • 2 tablespoons orange juice
  • ¼ teaspoon salt
  • ¼ teaspoon crushed red pepper
  • ¼ cup salted pistachios, roughly chopped

Instructions

  1. Preheat the pellet smoker, grill, or oven to 400°F.
  2. In a small food processor, combine all herb sauce ingredients and pulse until well mixed. Set aside.
  3. Remove green leaves from the base of the cauliflower and cut the head in half. Cut each half into 2 steaks about 1-inch thick.
  4. Rub the cauliflower steaks with avocado oil and season with salt and pepper.
  5. Place the cauliflower steaks on the grill or on a rimmed baking sheet for the oven.
  6. Cook for 15 minutes, flip the steaks, and continue cooking for another 10 minutes or until tender.
  7. Serve the steaks topped with the herb sauce and sprinkled with pistachios.
