Ingredients

The cauliflower steaks

  • 2 heads cauliflower
  • 3 tbsp ghee, melted (or coconut oil for dairy free)
  • 1 lime juice of (optional)

The seasoning

  • 2 tbsp nutritional yeast
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp sea salt

Optional toppings

  • 1 tbsp hot sauce (for spicy mayo)
  • ¼ cup mayo
  • to taste chopped cilantro

Instructions

  1. Preheat the grill to medium-high heat (about 450°F).
  2. Mix the seasoning ingredients in a small bowl.
  3. Prepare any optional toppings you plan to use.
  4. Remove the outer leaves from the cauliflower and cut off the thick stem.
  5. Slice each cauliflower head into 3 steaks, ensuring they are thick enough to hold together.
  6. Lay the steaks on a sheet pan for easy transfer to the grill.
  7. Brush both sides of the cauliflower steaks with melted ghee.
  8. Sprinkle the seasoning mixture generously over both sides.
  9. Grill the cauliflower for 6-8 minutes on one side until browned and charred.
  10. Flip and grill for another 5-6 minutes until cooked to your liking.
  11. Remove from the grill and optionally squeeze lime juice over the steaks.
  12. Top with optional toppings and serve.
