Southwest Tofu Scramble

Ingredients

  • 14 oz. firm tofu
  • 1 tsp turmeric (optional for color)
  • ½ tsp ground cumin
  • ¼ tsp chili powder
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp freshly cracked pepper
  • 1 Tbsp cooking oil
  • 10 oz. can diced tomatoes with green chiles
  • 2 green onions, sliced

Instructions

  1. Drain the tofu and break it into crumbles in a bowl.
  2. Mix the spices in a small bowl and sprinkle them over the crumbled tofu, stirring to coat evenly.
  3. Heat oil in a non-stick skillet over medium heat and add the tofu.
  4. Cook the tofu for about five minutes, stirring occasionally until heated through.
  5. Drain the canned tomatoes and add them to the skillet, cooking for another five minutes.
  6. Taste and adjust seasonings if necessary, then top with sliced green onions and serve.
