Southwest Tofu Scramble

Instructions
- Drain the tofu and break it into crumbles in a bowl.
- Mix the spices in a small bowl and sprinkle them over the crumbled tofu, stirring to coat evenly.
- Heat oil in a non-stick skillet over medium heat and add the tofu.
- Cook the tofu for about five minutes, stirring occasionally until heated through.
- Drain the canned tomatoes and add them to the skillet, cooking for another five minutes.
- Taste and adjust seasonings if necessary, then top with sliced green onions and serve.
