Spicy Tofu Scramble

Ingredients

The scramble

  • 1 14-oz. package firm tofu
  • 4 Tbsp. unsalted butter
  • 1 Tbsp. all-purpose flour
  • 1 large red onion
  • 2 tsp. kosher salt
  • 1 Tbsp. finely grated peeled ginger
  • 1 Tbsp. ground coriander
  • 1 tsp. ground cumin
  • ½ tsp. cayenne pepper
  • 1 14.5-oz. can crushed tomatoes
  • ½ cup coarsely chopped cilantro

For serving

  • to taste buttered toast
  • to taste lemon wedges

Instructions

  1. Drain the tofu in a colander to expel excess water.
  2. Melt 2 Tbsp. of butter in a skillet, add flour, and cook until lightly toasted.
  3. Add chopped onion and salt, cooking until the onion is softened and golden.
  4. Reduce heat and add ginger, coriander, cumin, and cayenne, cooking until fragrant.
  5. Stir in crushed tomatoes and salt, cooking until the sauce is deep red and slightly reduced.
  6. Add the tofu, breaking it up and cooking for 5 minutes to absorb the sauce.
  7. Remove from heat and stir in remaining butter and cilantro.
  8. Serve with buttered toast and lemon wedges.
