Spicy Tofu Scramble

can crushed tomatoes

Instructions
- Drain the tofu in a colander to expel excess water.
- Melt 2 Tbsp. of butter in a skillet, add flour, and cook until lightly toasted.
- Add chopped onion and salt, cooking until the onion is softened and golden.
- Reduce heat and add ginger, coriander, cumin, and cayenne, cooking until fragrant.
- Stir in crushed tomatoes and salt, cooking until the sauce is deep red and slightly reduced.
- Add the tofu, breaking it up and cooking for 5 minutes to absorb the sauce.
- Remove from heat and stir in remaining butter and cilantro.
- Serve with buttered toast and lemon wedges.
